Volatile metabolites as quantitative proxy for metabolic network operation of Saccharomyces cerevisiae

A multidisciplinary team from the TU Dortmund Prof. Engell and Prof. Rahmann, the Hochschule Reutlingen Prof. Baumbach, the Versuchsanstalt der Hefeindustrie Dr. Quantz and the B&S Analytik GmbH, we work on an new amd innovative control of Baker’s yeast production that is based on sensitive Ion Mobilit Spectrometry analysis of volatile metabolites in the fermentation off-gas.
